Andrea's Curried Pumpkin and Lentil Soup
Ingredients
- 700gm Jap pumpkin skinned and cubed
- 1 x large onion diced
- ½ cup red lentils – soaked and drained
- 1 x cup coconut milk

- 3 x cups of water
- 4 x teaspoons Curry Magic
- 1 x teaspoon salt or stock powder
- 1 x tablespoon butter

Preparation
Fry the onions & bacon in butter till golden brown
Add 4 x teaspoons Curry Magic and stir well
Add diced pumpkin and fold through
Add drained lentils, water and coconut milk.
Gently bring to boil and cook with lid on for ½ hour
Take lid off, puree mixture, add salt or stock powder and gently simmer for further ¼ hour.
Garnish: Sprinkle freshly chopped mint on top
