Andrea's Lentil (Dahl) Curry
Ingredients
- 1 heaped teaspoon of Curry Magic
- 1 cup dried red lentils (wash well)
- 1 large onion diced
- 200mls (1 cup) coconut milk

- 2 tablespoons ghee or oil
- 500mls (2½ cups) of water
- Salt to taste (1 teaspoon)
- 2 Handfuls of baby spinach (optional)

Preparation
In a large pan heat ghee or oil and fry 1 diced onion till well browned
Add one heaped teaspoon of Curry Magic and fry for30 seconds,
stirring regularly
Add coconut milk, water, salt & lentils
Bring to boil and simmer for 20 minutes
Option: Add 2 handfuls of baby spinach before the end of cooking time - mix through
Serve with basmati or jasmine rice
