Curry Magic Recipe List

Andrea's Lamb Curry

Ingredients
  • 1 sachet of Curry Magic (40 gms)
  • 1 kg of diced lamb
  • 1 large onion diced
  • 200mls (1 cup) coconut milk
  • 200mls (1 cup) tinned crushed tomatoes
  • 350mls (1½ cups) of water
  • 3 tablespoons ghee or oil
  • 3 cups mixed diced raw vegetables (carrots, beans, potatoes)
  • Salt to taste (1 teaspoon)
Preparation

In a large pan heat ghee or oil and fry 1 diced onion till golden brown

Add contents of one Curry Magic sachet and fry for one minute, stirring regularly

Add lamb, fry for one minutes coating well

Add coconut milk, tomatoes and water

On medium heat cook for one hour with lid on

Add vegetables and salt. Cook for 30 minutes with lid off

Let stand for a few hours before serving

Serve with basmati or jasmine rice
