Andrea's Fish Curry
Ingredients
- 1 sachet of Curry Magic (40 gms)
- 750gms fish fillets (skin on) cut into matchbox size cubes
- 1 large onion diced
- 200 mls (1 cup) coconut milk

- 200mls (1 cup) tinned crushed tomatoes
- 400mls (2 cups) of water
- 3 tablespoons ghee or oil
- Salt to taste (1 teaspoon)
- Juice of ½ lemon (or lime)

Preparation
In a large pan heat ghee or oil and fry 1 diced onion till golden brown
Add contents of one Curry Magic sachet and fry for one minute, stirring regularly
Add coconut milk, tomatoes, salt and water
On medium heat cook gravy for 30mins with lid off
Add fish – cook for five minutes - turn fish over – cook for five minutes
Add juice of ½ lemon (or lime)
Baste gently - do not stir
Let stand for a few hours before serving.
Serve with basmati or jasmine rice
