Andrea's Curried Chicken Drum Sticks
Ingredients
- 8 x Chicken drum sticks (skin off)
- 1 x sachet of Andrea's curry Magic
- 1 x cup tin crushed tomatoes
- 1 x cup coconut milk
- 2 x large onions sliced

- 2 x tablespoons of ghee (or olive oil)
- 1 x teaspoons of salt
- 1 x cup frozen minted peas
- 1½ cups water

Preparation
Fry sliced onions in ghee till golden brown (about 5 x minutes)
Add Andrea's Curry Magic and fry for 1 x minute
Add chicken drum sticks and coat well.
Add tomatoes & coconut milk and water, cook on medium heat with lid on for ½ hour then with lid off for ½ hour
Add 1 x cup frozen peas.
Serve over rice or cous cous
