Andrea's Crispy Curried Whole Chicken

Ingredients
  • 4 x tea spoons of Andreas Curry Magic
  • 1 x size 16 whole chicken
  • 1 tea spoon chicken stock powder
  • ½ tea spoon salt and pepper
  • 3 large tea spoons olive oil
  • 2 x red onions halved and wedged in four
  • 2 x carrots halved - cut lengthwise in four
  • 2 x zucchini halved - cut lengthwise in four
  • 1 lemon sliced
  • 200g dried apricots
  • ½ cup water
Preparation

Pre heat the oven and grease a large baking dish.

In a pan fry onions carrots zucchini and ½ the apricots in some butter till golden brown and place in the greased baking dish covering the bottom.

Cut the chicken through the back bone and butterfly out. Gently put your hand under the skin and pull away from flesh. Place slices of lemon and the remaining apricots under the skin.

In a shallow bowl combine Andreas Curry Magic, stock powder pepper salt and oil, rub half the mixture over the chicken. Add the water and pour the remaining mixture over the vegetables in the baking dish.

Place chicken over the vegetables in the baking dish and bake in a moderate oven for an hour. Baste with juices and return to oven for a further hour covering the chicken with a piece of foil to prevent from burning.

Let stand for 20 minutes before serving with fresh green beans and broccoli.
