Andrea's Chickpea & Vegetable Curry
Ingredients
- 1 sachet of Curry Magic (40 gms)
- 1 x 400 gram can of chick peas
- 1 large onion diced
- 200 mls (1 cup) coconut milk
- 200 mls (1 cup) tinned crushed tomatoes

- 350mls (1½ cups) of water
- 3 tablespoons ghee or oil
- 3 cups mixed diced raw vegetables (carrots, beans, potatoes)
- Salt to taste (1 teaspoon)

Preparation
In a large pan heat ghee or oil and fry 1 diced onion till golden brown
Add contents of one Curry Magic sachet and fry for one minute, stirring regularly
Add coconut milk, tomatoes and water
On medium heat cook gravy for 30mins with lid off
Add chick peas and juice, vegetables and salt. Cook for 30 minutes
Let stand for a few hours before serving
Serve with basmati or jasmine rice
