Andrea's Baked Curried Chicken & Mango

Ingredients
- 6 x Chicken chops (with bone) skin removed
- 1 x mango sliced
- 4 x teaspoon Andrea's Curry Magic
- 1 x teaspoon chicken stock
- 2 x ripe tomatoes diced
- 1 x large onion diced
- 1 cup fresh coriander torn
- 1 x cup cream
- 1 x teaspoon toasted slivered almonds
- Pepper & salt to taste
- 1 x tablespoon Ghee (or olive oil)
Preparation
- Place chicken chops in a greased baking dish
- Fry onion in Ghee till golden brown - add the rest of the ingredients (except the coriander and almonds) pour over chicken. Cover and bake in moderate oven for ½ hour.
- Take lid off turn chicken over and cook for a further 20 x minutes.
- Garnish with coriander and slivered almonds.
